Roland F. Probst July 21, 1950 - August 8, 2023

Roland “Rollie” F. Probst, age 73, passed away peacefully Tuesday, August 8, 2023 at St. Elizabeth Hospital in Appleton, Wis. He was born July 21, 1950 to Alois and Rosemary (Dietzen) Probst. He shares his birthday with his great-nephew, Joseph Vosters, and he was very proud of that!

Rollie graduated from Kimberly High School in 1968 and Carroll College (now University) in 1972, where he was a member of the Delta Rho Upsilon fraternity. He worked most of his life in the food service industry. Rollie watched cooking shows for creative inspiration, but his family came to love the simple - yet delicious - Cowboy Casserole and Chicken Dijon dishes that he consistently made for gatherings. He also worked for Scanlan Jewelers and, most recently, Festival Foods.

Rollie enjoyed many things in life, including travel, reading, and time with his large family. He loved bringing his nieces and nephews (and their children) on adventures, whether to the Badlands or afternoons at the movies. Holiday gatherings were very important to him, and he wanted to make them important for others. Rollie was steadfast in his Christmas gift-giving to his nieces and nephews, even presenting them hand-made jewelry for their important life milestones, another one of his hobbies and talents.

The Catholic Faith was Rollie’s cornerstone, and he was a member of Holy Angels/Holy Spirit Parish his entire life. He supported his family in their faith endeavors, including crafting each of his nieces and nephews rosaries for their First Holy Communion. And his support extended to the community; he donated his jewelry and rosaries for fundraisers and coordinated a family-sponsored Sunday Supper for the parish each year. In 2021, Rollie became a member of St. Joseph Fraternity Order of Franciscan Seculars to deepen his faith life.

He is survived by four sisters and two brothers: Chuck and Rita Nelson, John and Debra Probst, Rich and Mary Daczyk, Brian and Ellen Starszak, Theresa Adrian and Jamie Jackson, Joe and Cathi Probst. His nieces and nephews: Aurora Nelson, Erin (Scott) VanHulle (Goddaughter), Katrina (Sam) Pakala, Sarah (John Ploeser) Probst, Melissa (Corey) Carter, Jonathan (Kaila) Probst (Godson), Adam Probst, Danielle (Grady) Stewart, AJ Daczyk, Dylan (Kenzie) Daczyk, Lindsey (Tim) Torbeck, April (Todd) Vosters, David Starszak, Garret Adrian, Ellie Probst and Michael Sugden, and Ben Probst and Autumn Hull. Great-nieces and nephews: Isabella and Elliana Bynoe; Liam, Penelope, and Lawrence Pakala; Blake Ringler; Amelia and Charli Probst; Victoria, Camilla, and Sophia Stewart; Emma and Hank Daczyk; Nathan and Claire Torbeck; Asher, Peter, and Joseph Vosters. Close friends: Karen Davidson, Carol and Matt Stevenson and family, Rob and Michelle Serwas and family, Angie and Brittany (Goddaughter) Serwas, Eric and son Zak (Godson) Kellsvig.

Rollie is preceded in death by his parents; his brother, Leon Probst; and his great-niece, Eleanor Pakala.

Visitation will be held Saturday, August 19, 2023 at HOLY SPIRIT PARISH – DARBOY CHURCH (W2796 County Road KK, Appleton) from 9:00 a.m. until Mass at 11:00 a.m. The Rev. Carl Schmitt will officiate. Inurnment at Holy Angels Cemetery.

Roland was a good man, and he will be greatly missed by his entire family.
